Chickpea & chocolate Cookies

INGREDIENTS:

  • 400g/1 can Chickpeas 

  • 1/3 c honey

  • 3 tbs Peanut Butter

  • 1 tsp cinnamon

  • 2 tbs maple syrup

  • 1 tsp vanilla bean

  • ¾ c choc chips 

METHOD:

  1.  Combine all ingredients except the choc chips into a food processor and blend until a smooth consistency is created.

  2. Prepare a lined baking try and preheat the oven to 180 degrees.

  3. Transfer mixture into a bowl and add the choc chips; slowly folding the choc chips through the batter.

  4. Using a tablespoon transfer large coin-sized batter onto the tray and flatten softly (you may need to wet the spoon prior to transferring batter to the tray so the batter doesn’t stick to the spoon).

  5. Bake for 15 minutes.

  6. Allow cookies to cool before touching or consuming as they may appear soft but that harden as they cool.
