Chickpea & chocolate Cookies
INGREDIENTS:
- 400g/1 can Chickpeas 
- 1/3 c honey 
- 3 tbs Peanut Butter 
- 1 tsp cinnamon 
- 2 tbs maple syrup 
- 1 tsp vanilla bean 
- ¾ c choc chips 
METHOD:
- Combine all ingredients except the choc chips into a food processor and blend until a smooth consistency is created. 
- Prepare a lined baking try and preheat the oven to 180 degrees. 
- Transfer mixture into a bowl and add the choc chips; slowly folding the choc chips through the batter. 
- Using a tablespoon transfer large coin-sized batter onto the tray and flatten softly (you may need to wet the spoon prior to transferring batter to the tray so the batter doesn’t stick to the spoon). 
- Bake for 15 minutes. 
- Allow cookies to cool before touching or consuming as they may appear soft but that harden as they cool.
